Miso Steak and Mushrooms

Summer is here and if you go on a walk around your neighbourhood you're bound to smell someone grilling. This is also the time where store start marking down their BBQs so maybe this year is when you purchase one! Windsor meats has a summer BBQ pack that makes it easier to test that new grill. This month they had steak, burgers and sauce in the pack.

I have never owned or used a BBQ before. It was always left in the hands of people who were more skilled in the whispering of grilled food. This time I had the courage to face the flames of a grill. 

The steak turned out beautifully and if you have time to prep, allow it to marinate overnight. 
The marinade can be used for other things but it's sweet, miso-y and light. If extra firm tofu was marinated with the paste, it would also be great on the grill. 

Miso Steak and Mushrooms

Serves 2-3, time required: 2 hours and 20 mins (marinating/cook time)

Ingredients:

  • 2 flank steaks (from your local butcher, like Windsor Quality Meats)
  • 1 tablespoon white miso
  • 1 teaspoon mirin (sweet cooking sake)
  • 2 tabespoon soy sauce
  • 1 tablespoon oil
  • 200g mushrooms, chopped (I used shiitake)
  • 1 tablespoon butter
  • Pinch of salt 

Directions (stove) :

  1. Mix the miso, mirin, soy sauce, and oil in a bowl until it becomes a paste
  2. Spread the paste evenly on the steak and allow it to marinate for at least 2 hours but you can leave it overnight for more flavour.
  3. About 20 minutes before cooking, remove steaks from fridge and allow it to sit covered, at room temperature.  
  4. Preheat oven for 350F
  5. Heat a frying pan and brown both sides of the steak, 4 minutes each side at medium high heat
  6. Bake the steak for 15-20 minutes (I like it medium so I baked it for 20 mins)
  7. Once the steak is baked, set aside to rest on a separate plate for at least 10 minutes.
  8. Using the same pan, add the butter and allow it to melt then add the mushrooms and toss. Allow it to cook on medium heat for 5 minutes and then add a pinch of salt. 
  9. Serve the mushrooms on top of the steak

Directions (BBQ) :

  1. Mix the miso, mirin, soy sauce, and oil in a bowl until it becomes a paste

  3. About 20 minutes before cooking, remove steaks from fridge and allow it to sit covered, at room temperature.
  4. Using foil, combine the butter, salt, and mushrooms and set on the grill furthest away from heat.
  5. Grill the steaks, 3-5 minutes each side.
  6. Allow it to rest for 5 minutes then serve with mushrooms
