Lemon Thyme Pork Chops

Vancouver being the food city that it is, we are fortunate to have amazing local shops and markets. I don't often eat meat but when I do, I make sure to purchase local and great quality. Luckily I live close to Windsor Quality Meats and they had some pretty gorgeous pork chops on special for May so I decided to pair it up with some local/in-season ingredients.

This quick and easy recipe would be great for a weekday dinner or when you're having a dinner party. You can also use this recipe on the BBQ but omit the honey since it will burn with heat over 300°F.

Lemon Thyme Pork Chops

Ingredients

(Serves 4)

  • 4 pork chops from Windsor Meats (or anywhere you get your meat)
  • Pinch of salt 
  • Pinch pepper
  • 2-3 tablespoon honey
  • 7 sprigs thyme, stems removed
  • Zest of 1 lemon 
  • 3 tablespoons of unsalted butter

Directions

  1. Rub the pork chops with thyme, salt, pepper, and lemon zest.
  2. Marinate overnight or minimum 3 hours.
  3. Preheat oven 300°F
  4. Brown both sides of the pork chops and coat it in honey.
  5. Place the pork chops in a baking pan (or leave it in the cast iron pan if you have one) with a dab of butter on top of each chop
  6. Bake them for 30-35 mins or until internal temp of 160°F (don't worry, it will continue cooking when it's resting)
  7. Allow the chops to rest for 5 minutes before serving with rice or potatoes. Add more honey if desired.
